The bud is the vital part of rice, the embryo of the new plant that contains the most precious nutrients of rice, in particular mineral salts and vitamins.The patent consists in reintegrating the bud, (after having separated it from the chaff) to the grain of rice with a simple and mechanical method of mixing and slow rubbing between the rice and the bud to obtain the complete resorption of the bud in the external part of the grain. Acquerello Carnaroli Rice is grown in Piedmont, watered with clear meltwater from Mont Blanc and enjoys an exceptionally long storage period of 1-3 years. This preserves strength, vitamins and proteins. The rice grains increase in volume and weight during cooking. This increases the absorption capacity of spices and reduces the stickiness considerably - it remains firm. An ideal risotto rice of the highest class!
