Produced from Pinot Noir grapes vinified in pink. It is a sparkling wine obtained by slow fermentation, and subsequent maturation on its own yeast for a period of twelve moons. The scent is elegant, with hints of forest fruit and ripe yeast. The taste is dry, harmonious and of good length. Excellent as an aperitif, it accompanies raw fish appetizers, first and second courses based on fish. 12.5% Vol
